I once read a book called Lonesome Dove. They went on a cattle drive all the way to Montana. Gus stopped in Nebraska to see an old girlfriend. They went on a picnic by a beautiful clear creek. Laura Darling brought fried chicken. Gus knew how to eat a chicken drumstick. He crunched the gristle, swallowed it, then cracked the bone and sucked out the marrow. City folks now simply eat the tender part. Lorie darlin’.

Fried chicken dipped in pickled jalapeno pepper juice, with a bite of pepper with each bite of chicken is a mighty fine meal I've got a thing for Express Chicken. I can knock out a ten piece dark by myself. TEN PIECES?!!! God a'mighty, Josey! Popeyes has a Tuesday special. Thigh and drumstick for $1.

I remember when they were often on sale at 15¢ per pound. I sold tons of leg 1/4`s, but I wouldn`t eat one on a bet. The cheapest I can remember selling them for was for .19¢ lb.

It didn't take long to teach her how to eat chicken properly. She was born a yankee. Now, she's 100% Texan.

My wife worked the meat counter at Albertson's for a while. Lady came in asking for "lequattas". after asking her three times the lady finally said "leg quarters!"

I end up picking it when she's done.

My wife is born in bred Texas she still don't clean a chicken thigh properly. I end up picking it when she's done. I showed my wife how to twist the end of the leg bone right out of a thigh leaving all the meat hanging off the sliver of pelvis. She's upped her game considerably Speaking of chicken thighs, all this talk about chicken made me hungry for some yard bird so I picked up a 10 piece dark from the local fried chicken shack. $10 a box including hot rolls, I can't cook it that cheap. And it sure is good.

Leg quarters are not the cheapest part of the chicken. Many markets and bait shops carry chickened necks for crab bait. I use a crab net while training bird dogs. Look closely at the bottom of this picture and you can see a bob white quail under the net. I consider my dogs broke when they will hold point for a struggling quail.
