Wife was under the weather today so that left me to fend for myself for supper. I defrosted a couple of chicken legs for dinner. I made a blend of 1 teaspoon paprika 1/4 teaspoon of each of the following Cumin. Garlic Powder. Onion Powder Ground Coriander. Sugar Next I added a shake or two of salt. Finally I took about 1 teaspoon of Szechuan Peppercorns and toasted them until fragrant in my skillet. After toasting I ground them with a mortar and pestle making a coarse powder. I added the Sezchuan powder to the other spices. I took my thawed legs and cut a couple of slashes into the thickest part of the leg, coated the legs in spices and baked them in a 350 degree F oven for 60 minutes. I made a platform using foil to prevent the legs from frying in any released chicken fat. The sezchuan peppercorns leave your mouth tingling. It is a different kind of feeling than cayenne, chili de arbol or other spicy peppers.

Always called them pink peppercorns. It does look awesome!!!

Always called them pink peppercorns. It does look awesome!!! Thanks from teaching me something new. I didn't know that. I just recently "discovered" using them in my cooking. Today was my third meal to try using them.

Those look tasty, but two sounds like an appetizer! I understand that two seems a little short but Doc has been after me for a while to loose a little weight. Doc is tired of sending me out to get weighed on truck scales.
