I love birria tacos. Though these are not traditional birria tacos, this is my spin on a green chicken version. They don’t come out pretty, but they do come out tasty! The family tore them up.
First I caramelize red onion & jalapenos in butter, then add garlic & cilantro.
Then I strain all that. A little bit of that mixture will go in each taco. The infused butter is used to dip the white corn tortillas in to fry them.
Then I get the shredded/seasoned chicken ready and add one jar of my homemade green sauce.
Then threw together a consome for dipping the crispy tacos in, it’s just a broth based dipping sauce rich in authentic Mexican chilis.
