I was curious to see what's everyone is putting in theirs. I'm making some tomorrow for a few missouri co-workers. Wanted to put my best foot forward. My typical recipe is a few dried anchos and dried arbol chilis cooked down and blended with some beef stock, some whole peeled tomatoes, cubed chuck roast, cumin, chili powder, sliced garlic, and diced white onion.

Mine is very similar to yours except no tomatoes and i use fresh peppers.
Ive never had a complaint.

I've posted my carne g recipe on here at one time, I'd have to search for it though. It's a simple recipe and always good. I make it with venison, feral pork, most exotics, or beef. I cube up my meat and give it a light dusting of Fiesta Fajita Seasoning, cover and stick in the fridge. I used to dust my meat in flour, but don't do that anymore. I get a better gravy doing it this way. I like onions, jalapenos, garlic, & bacon in mine, so in a Dutch Oven I will fry a pack of bacon crispy & set aside. Remove almost all of the bacon grease, then lightly brown the meat on medium heat & remove. Then I add one stick of Falfurrias Sweet Cream Butter (unsalted) and one chopped red or yellow onion. Cook that down real good until the onions are dark and caramelized, then add the jalapenos & minced garlic. Then I add some of the bacon grease back and start adding flour (can use some veg oil too), keeping a good stir on it. Once that base is browned good then I start adding low sodium beef or chicken broth to the pot (better than water) and make a nice gravy. Then add the meat back. You want just enough gravy to cover the meat (the meat will release more water while simmering). Cover that, and reduce to a simmer for 2-4 hrs depending on what kind of meat. 2-3 hrs usually does it. Once the meat is fork tender, THIS is when you want to add your Fiesta brand Carne Guisada Seasoning. Always add at the end, if you season it early you will lose most of the flavor and thickness. Stir in the carne g seasoning to your liking, it has everything else you need in there (cumin, corn starch to thicken more etc). Once your gravy thickens up good and you are satisfied with the flavor (check salt), it's done. With the lid off this part doesn't take long. You can either crumble the bacon and add then, or just lay a slice of bacon on your taco (I like cheese sometimes too - put cheese on bottom so will melt). Serve that on some fresh homemade flour tortillas with rice & beans and there you have it. Of course, you can always skip the bacon & japs but I recommend NOT skipping the caramelized onions in butter. Some folks like to add bell peppers & tomatoes too, but I don't. There is a red carne guisada & a brown carne guisada normally served in S Texas, I like carne g with a brown gravy. When I go red, it's a chili colorado and different recipe. Hope this helps. Just ordered this seasoning today, with a bunch of others I can't get up here. Will give a try.
I use this one, and it's OK by me, but still needs some refinement to be exceptional!!
* 1 tablespoon vegetable oil *
2 pounds beef sirloin, cut into 1/2-inch cubes *
1 large onion, chopped *
1 large red bell pepper, chopped *
4 large tomatoes, chopped *
5 cloves garlic, minced *
2 tablespoons ground cumin *
1 teaspoon dried, crushed Mexican oregano *
1 tablespoon garlic powder *
1 teaspoon salt *
½ teaspoon ground black pepper *
½ teaspoon paprika *
⅓ cup water
