I roasted some Hatch Chile`s yesterday and made some sauce for enchilada`s. I was surprised at how hot it was after de-seeding and washing the inside out. This was my first time using them so I really did not know what to expect. They did have a good flavor on the enchiladas, I just had to use the sauce sparingly. I have some left over to try with other things. I think I am going to make some smoked Queso and add some to it. I used "Dogcather`s recipe" and we really like it. Thanks for sharing with the group. A lot of times the green Chile’s are hotter than the reds. The Hatch variety has always been known to be hotter.

I'll probably get shot but.....you can do 50% Hatch and 50%Green Bell Pepper and tone it down. Lot's of folks use tomatillos but that's a whole different taste.
Or..become a chili head.

I really like to take a flour tortilla and chucks of chicken breast and some chopped up jalapeno pickles, roll it up enchilada style and put the green chili and queso blanco on top-pop in oven/broiler- for an old cuss like myself- that's about the limit to my cooking abilities.

That’s a dang good idea! Love sour cream on enchiladas.
