For the last few months I have been cooking new things in the kitchen.

Last night I tried a peanut crusted grouper topped with a home made sweet and spicy chili sauce.

The chili sauce was a combination of fresh garlic, Asian chili peppers, fish sauce, sugar, white vinegar, lime juice, spring onions and chopped cilantro.

The chili sauce was the star of the meal. Before I finished eating I put the chili sauce on the grouper, the rice and the broccoli.

I don't think it taste anything at all like largemouth. Much better in my opinion cheers

Grouper is some of the best fish out there. Only thing better is halibut.

Down in Costa Rica a couple years ago, I was about wore out from sailfish, roosterfish, and tuna after 3 days, and asked my Captain and Mate if they had grouper fishing 'cause the restaurant never had it. They said yes, but no one fished for them because they weren't a glory fish. Told him the next day to bring a big spinning outfit with 300 yds of braid and we were gonna load up. I wanted a half dozen for the table, and they could keep what they wanted after I was done. Talk about bright eyes and big smiles!!!

I kept 6 for the kitchen at the lodge, and they got 3 apiece for their families. Said their boss would skin them alive if they kept more to sell, and were only allowed to keep what I let them. I love CR!!

My grandfather used to stay there a lot too. Instead of hotels, he met a family and started staying with them for next to nuthin, and got anything he needed. Food, laundry, etc.

Love grouper but nothing beats a nice fresh flounder filet...dip em in egg, quick dip into sesoned bread crumbs fry them in butter...melts in mouth...secret is not too much bread crumbs
