No kidding. Brisket prices have been crazy as of late. If you want sticker shock, go to Costco and purchase a prime brisket.

Yep. Looked at some this last weekend. $70 for about a $30 slab and didnt even look that good

Wagyu is awesome. But you will pay $$$ for that awesomeness.

The positive is that for home cooking, Wagyu is more forgiving than a Choice brisket.

About a month and a half ago a wagyu brisket was $140! Yrah, we had fajitas....

Packing plants got hit hard with Covid 19, and had ti pay employees top wages. Good chance those wages won't be dropping too much in the future.

I know that it's blasphemy, but I have been quite pleased with cheaper briskets using Sous Vide for 48+ hours at 135F - then finished on the smoker. Not for purists, but it is a great way to successfully serve cheaper beef.

That's a steal for a prime, I used to get them for $3.29/lb then prior to the covid they were $3.99/lb.

Not just brisket, but fajita prices are crazy as well. I miss the days when skirt steak was considered a trash cut and cheap! Those days are long gone.

I was hoping they would go on sale here in Alabama. Nope. $70 - $100 for a whole brisket. Looks like BBQ'ed chicken legs for us this weekend.

I started using the tenderized beef skirt steaks. Less fat.

I agree 100%. I started smoking them about 10 years ago when briskets went through the roof. They do taste good , but not even close to a good brisket. I buy them and make country style ribs out of them now. Better than and spare or baby back rib.

Our local Albertsons had briskets for $1.77 last week if you have their app. I didn't buy one since I already have 3 in the freezer.

Seems any cut of beef that is sold as a popular food item is high... brisket, fajitas, ribeyes... You can treat a chuck roast like a brisket with pretty good results. An old school alternative is the "shoulder clod"... a good butcher will know what it is and may be able to get them for less than brisket.

Used to smoke chuck roasts pretty often, that’s some good eatin’ right there. Haven’t done one in a long time, thanks for the reminder.
