I wonder how that would work for you if you used small ramekins? Put filling in the ramekin, add a biscuit or two, and then bake.

Big muffin tin. Roll the biscuits out and line the muffin holes like a pie plate. Fill em up and fold over the excess to cover the top a bit.

Yeah, i used regular sized muffin tins. They were a little small. Would be better with mor filling! Still pretty darn good tho!!

DC, until you’ve had a good homemade chicken pot pie, you’ve not had a proper chicken pot pie. I’m still trying to duplicate my Point Blank little old lady neighbor’s pot pie.

DC, until you’ve had a good homemade chicken pot pie, you’ve not had a proper chicken pot pie. I’m still trying to duplicate my Point Blank little old lady neighbor’s pot pie. Has to have a good homemade crust and use a rotisserie or roasted chicken, heavy cream and butter. Wife makes a good one.

My mother and grandma made them, it's not the taste or anything, I just got tired of them. My mother did learn how to make a biscuit filled version from a friend that was Filipino. It was also pretty good, but in my mind it was still a pot pie. .

Hadn't made them for a couple years, and they just sounded good. We love the Grands at deer camp, with eggs and bacon.
They were excellent, and really hit the spot. They could have been in a bigger tin, or filled up more and would have been more moist. Wanted to experiment, so we tried a couple things different. Used one tin of Buttermilk and one tin of Original. Tried to spread out the buttermilk by hand and kneading it to shape and that didn't work out as well as the rolling pin. The Original we rolled out, got a very consistent thickness, and a little bigger footprint. If you filled it more, there would have been less dough on top, and a little thinner crust.
Still great tho.
