What is your favorite non-popper dove recipe?

Not that poppers aren't great, but let's talk some variety.
I peel the breast lobes off, soak them in a brine of water, salt, and brown sugar, for at least a half a day. They really plump up and stay juicy. Then I dry them off and throw them on a very hot grill, both of which helps them crisp up a little, for about two to three minutes a side, being thin they cook quickly and I want them about medium, still pink in the middle. Then I serve them with chimichurri made with cilantro as the leafy matter. I 5 year old daughter called me "an artist of yum" when I first made these, and yes I cried tears of joy a little.

I like to make pan fried dove quesadillas.
I cut the breast into 2 strips, season them as I would if they were going to be poppers, just roll them in flour and pan fry them. I just fry them long enough to keep them at a medium finish. Then I like to use monterrey jack cheese for the quesadilla.
Simple, quick and I don't have to worry about the molten cream cheese lava!

Marinate breast meat in Caribbean jerk, thick cut bacon cut into squares, onion, peppers, also in squares. Stack on a skewer, Grill as is or wrap the whole skewer in bacon. Glaze with more sauce.

Saute in garlic butter and blackberry jelly or honey and habanero but I don't.

A few years ago a buddy and I were hunting but we managed to only get 2 or 3 birds total. We stripped all the meat off the breast, chopped the meat up, mixed with flour, salt, pepper and some other spices. Fried in a little oil. Dove fritters for breakfast.
My Mom once took 8 or 10 meat still on the bone breasts, dredged them in flour, salt, pepper and lightly pan fried them then made a gravy and let the breasts stew in the gravy for a few minutes.

Pick the birds, leave all skin on, soak in buttermilk (for a couple of hours) then dredge in seasoned flour, fry in a cast iron skillet. Make gravy, and rice and your good to go!

debone the breasts, pound 'em out between saran wrap, dredge in milk and egg and seasoned flour.
pan fry in oil.
gravy, taters, salad, jalapeno peppers.
get back.

I like making hot wings (so to speak). Debone the breasts or pluck the whole bird/skin on and deep fry them naked until they're crispy, then toss them in your favorite wing sauce or hot sauce. This is always a big hit.
Dove gravy is also hard to beat. I'll use just dove but I prefer to pop a couple cottontails to go with it. Pluck the birds and remove the skin. In a cast iron Dutch Oven season & lightly brown them in a little bacon grease, remove. Add butter and onions. Make yourself a nice dark batch of seasoned onion gravy. When the gravy is there, add the birds back. Simmer for a few hours until tender. Serve over rice with a side of corn mach choux.
Dove & smoked deer sausage Sauce Piquant is also a favorite.
Can also make dove jerky, it's pretty good!

I’m having a hard time finding the website post but it’s very similar to this one, only difference is we used Brie cheese and took them out about 5 mins before done and honey glazed. To summarize for those who don’t want to check out the link, basically bacon wrapped, Brie and date with the dove breast and honey glazed, then baked. Never saw bacon wrapped doves with cream cheese and peppers from my family. There was no need for that. From Nene Altwein - Take dove breasts and season them with salt, pepper and garlic. Roll them in flour and brown them. Put them in a baking dish without stacking breasts and cover 3/4's up with a solution of white wine & water (about half & half) and include a liberal amount of Worcestershire sauce.
Cover and bake at either 2 hours @ 325 or 3 hours at 225-250. Once or twice open up and roll the dove or otherwise baste in the "juice". Serve over brown rice and use the liquid as your gravy.
It is a little different from what most are used to and believe me when I tell you this, it is schmeck gute. Tried once with red wine (made more sense to me) and figured out not to tamper with Nene's recipes. The longer slower method is preferred btw.

Though I guess they’re still technically popper, I wrap half with bacon and pineapple and through them on the grill and they’re delicious

Pluck the bird and put it on the smoker. I like to glaze with peach jalepeno jelly. Cook to medium rare then slice and dip in horseradish sauce

Marinated, diced breast meat browned in a pan. Then, mixed in Zatarain's dirty rice. Serve with a dollop of sour cream and some Tapatío hot sauce.
Its pretty hard to beat poppers. But, this comes close.

I do something similar to this but sub about 50/50 zesty Italian and worchestire for the marinade and hot smoked deer sausage for the bacon. Great way to get rid of all that deer sausage that your tired of eating on a tortilla or piece of bread.

Fry like chicken using Canola oil.
Basically make them dumb nuggets, roll them in eggs, flower, and panko bits that have bacon bits in it. The panco can have lots of seasoning, then fry them and they wonderful

I normally use duck legs, thighs and hearts for this recipe but dove breastesses or whole doves works just as good as the other. Egg noodles, cream mushroom soup, box of fresh mushrooms sliced, white onion and bell pepper. Cook the doves either in oil or steamed. Add in all the ingredients. PM later with a thank you. Thia dish is definitely a panty dropper.

Years ago when I first read Jack O'Connor's "Game in the Desert Revisited", I was struck by a dove dish that his wife Eleanor prepared for them one night in camp. Since then, the She-Wolf and I have done a passable job (I think) of recreating it. In describing it, Jack wrote, "My mouth waters as I write...". You be the judge!
Eleanor's Doves (dedicated to Mrs. Jack O'Connor
Ingredients • 12-15 mourning dove breasts (boned out) • 8 pieces thick sliced bacon • All Purpose Flour • 1 medium onion (chopped) • 1 (or 2) 15 oz can tomatoes • Spaghetti • Salt • Pepper • Grated cheese
Preparation In a large, heavy pan: • Fry the slices of bacon crisp; remove, crumble and reserve for later • Salt, pepper and flour the dove breast meat pieces and lightly fry in the bacon grease. Remove. • Add additional flour to the remaining grease, heat and stir until the flour has begun to brown. • Add the onions and sauté while finishing browning the flour. • Add the canned tomatoes and bring to a low simmer. • Add the dove breast meat and simmer for 30 minutes. • When the dove meat is getting tender, break the spaghetti into small pieces and add to the pot. • When the spaghetti is close to al dente, add the crumbled bacon. • Top with grated cheese.
Note: This recipe is an approximation of the dish that Jack O’Connor described in his book, “Game in the Desert Revisited”, Chapter XIV, “Speedster of the Upper Air”.
