Cold front moved in last night, and it's Fall here in Idaho. Only got up to a rainy 50 degrees today, and we had snow up in the mountains. Time for some belly warming foods. Chicken taco soup, with cheese/sour cream/avocado. The little chilled bite size tomatoes were perfect finger snacks.

Easiest thing I ever made, and good too!!!
Taco Soup 1 - 15 oz. can pinto beans, rinsed and drained 1 - 15 oz can of black beans, rinsed and drained 1 - 15 oz can of sweet corn kernels, or bag of frozen corn, drained 1 - 14.5 oz can of diced tomatoes 1 - 12.5 oz can chicken breast meat, drained and shredded 1/2 - 15 oz can (or 1 - 10 oz can) of green enchilada sauce 1 - 4 oz can diced green chiles 1 - 14 oz can low-sodium chicken broth 1 - 1 oz packet of taco seasoning, mild or hot to your taste 1/2 tsp cumin, optional 1/2 tsp chili powder, optional 1/2 tsp garlic powder, optional
Cook to temp., approx. 10 minutes
Serve with cheese, sour cream, avocado, jalapeños, tortilla chips. Whatever you desire.

The only place it got down to 50 degrees here in Central Texas was in the bottom part of the refrigerator, and that was only for 3 hours. . . 101 and felt like 104. But the weather forecast is for us to feel that cold front of yours about mid-week. A high of only 89.

Lived and raised kids in Bay City/Matagorda. Live in Idaho and one parent left here. Only get to enjoy Texas in 3 seasons - turkey, redfish, and deer seasons. Can’t complain tho; there’s no hurricanes, tornadoes, heat, humidity, mosquitos, snakes, chiggers, or fire ants.
