What do you like/recommend For a packaged breakfast sausage seasoning?
Going to a friend's place in early October to butcher a pet hog that has gotten too big.

Read a few recipes, list the spices you like and the amounts and go from there. One of ours was a combination of German sausage and chorizo, another was a basic breakfast sausage recipe with a mix of chorizo spices. Neither of us like sausage with a lot of sage, so, it was reduced or dropped out of the recipes.

The best way we found to get our flavors was to get a couple of pork butts and grind them up and make about a pound test sausages mixes. Make sure you measure correctly and keep notes of weight of meat, and amounts of the spices. .

With a smaller amount of seasoning added to ground meat it makes some killer hamburger patties. Find a 1 pound recipe for each, then make about 3 to 4 pounds of hamburger patties using the spice ingredients from the 2 recipes.

Oh my. Sausage, like good pinto beans, is so much about what you do not put in it. Keep it simple - non-iodized salt, coarse black pepper, red pepper and garlic. Be done with it. Nothing more needed.
