That looks outstanding! Man, medium AIN'T burnt LOL. I can show you burnt. The other day I treated my family to big prime ribeye's, they all like their's well done/extra well done. It's the way we all grew up eating meat, I'm the only one that saw the light as a young man. I like mine medium. I cooked all of their steaks medium to medium well and they couldn't do it. They all went back on the fire until they were actually burnt. SMH. Next time, they are cooking their own steaks.

LOl. I know how that works. A good friend and his wife come over a lot. They have To have well done, and it kills me to do that. I asked about fish and they would love their salmon that way, so I usually do both and the timing is just about perfect!! Any more done than medium rare, and I might as well do carne quisada and stew it. Come to think about it, that sounds pretty darn good too, and might be another project soon!!!

Waygu cooked medium is burnt. It has a different kind of fat from my understanding. No saturated fat, higher percentage of omega-3 and omega-6 fatty acids, and a lower melting point. It's different from other steaks from what I've read/heard. I've always been told to almost treat it like a tuna steak.

Anybody ever buy Wagyu from HEB? Just wondering if it’s worth the extra cost? I’m not really satisfied with the quality of the HEB prime sometimes.

It will be more consistent than HEB prime. I've also done the waygu brisket a couple of times. I'll stick to prime for the brisket. Wasn't a noticeable difference.

These are the Prime ribeye's I bought the other day from HEB (bone in and bone out). In the past they've always been pretty consistent here on the marbling, but this time not so consistent. 8 had good marbling and 2 did not, but it was what they had on the shelf so I grabbed them. I could have had more cut if I wanted to wait a bit, but was in a hurry.
