My wife loves it, when I cook the day after I have a miserable showing like last night's portobello mushroom fail. I tend to try a little harder, to redeem myself. smile
Tonight we went for a Mexican theme instead, and I made a taco stuffed garden tomato on fried corn tortilla, refried beans and pickled jalapeño slices. Not too heavy, and beans go with everything!!

Sorry for delay, out RV camping. Tomatoes are fresh, we attacked with knife and fork and then rolled up the leftover debris in the shell. Had a couple extra shells to scoop up more beans too!
