Well, I'm sorry to say, that tonight I was an absolute and total flop. I decided on a sausage, bacon, cream cheese, and mozzarella stuffed portobello mushroom bake with Panko and parmesan cheese cap. Sounded wonderful to me, but I hadn't done mushrooms in several years. Yes, that is usually the wife's expertise!

They were too small and thin, and not cupped enough, I over-packed the filling, and the topping had too much Panko and not enough parm to melt properly and brown. I over-cooked them and they laid flat, and all the gooey goodness ran out onto the non-stick foil. It was one hot, sticky, delicious mess. I was too embarrassed to even take pictures!!

The wife and I could only eat two apiece..... smile

But there was room for Blue Bell Peaches and Vanilla!! Hahaha

Messes like that are always delicious. Presentation to the palate is all that really matters anyway!

Quail hunting is like walking into, and out of a beautiful painting all day long. Gene Hill

My plating is always a mess. Mostly because I’m. It a restaurant chef and I don’t care. I care Way more about how it tastes than what it looks like.
