When I was a pepper head I made all sorts of salsas and hot sauces from all sorts of different peppers that I used to grow, now days I normally just make 3 kinds. Green sauce, red sauce, and smoked habanero sauce. I'm making a double batch of my smoked habanero salsa tonight while cooking supper. Canning most of it, since I've been on a canning trip lately. I've been enjoying the canning learning curve. Have been making these salsas fresh for years, but have learned that after canning the flavor changes a bit sometimes on at least one of them. Working on that.... Smoking the tomatoes, onions, garlic, & habaneros with seasoned Live Oak.

Id like to know exactly how you make it. Sure. It's easy. One normal sized blender is what I consider a batch, recipe below is my recipe for one batch. 10 med to large roma tomatoes (riper the better) 1 large red onion (halved) 1 head of garlic (peeled) 4 orange habaneros I make a small indirect fire in my Weber kettle, and use either Mesquite/Live Oak/or Hickory for smoke. I lay down a sheet of heavy foil on the grill to trap the juices. Smoke with exhaust closed until you have nice color and the tomato skins peel back, and everything is a little soft. I peel the tomato's and pull the stems off of the tomato's and peppers. Then throw all of that in the blender and add: 1 bunch of cilantro (chopped) 1 tsp of black pepper 1 tsp of cumin 1 tsp of celery salt 1 tsp of sea salt 1 tsp of sweet smoked paprika the juice from 3 limes Blend it up to your liking and either eat fresh, or can. That's it.

About how long do you smoke it to get it right? I dunno, I've never timed it. It doesn't take very long though. Anywhere from 30 min to an hour normally. I just keep an eye on it and start feeling for tenderness when the tomato skins peel back. Make sure your fire is not too hot, it's doesn't take a lot of heat. You don't want your tomato's to bust and lose too much juice.

dang that sounds good! I have tried smoking the finished salsa and had pretty good results, never thought about smoking the ingredients separately before blending. I might have to give it a try but without the Habanero or fewer ... my wife used to eat lots of hot stuff but following stomach surgery, it has to be really toned down to be minimal heat (to me).

Yall give it a shot, it’s good.
The first time I ever made this I used 8 habaneros instead of 4. I love hot stuff and it all got eaten, but man 8 is tooooo many lol.

I love this , we always have a batch made at the station . We smoked some reapers last shift and that salsa will kick you in the face . Reapers or no joke! LOL. I haven't grown reapers, but a friend of mine did. He took them offshore working with us. We ground the peppers up into a paste, and mixed them into cans of Planters Peanuts. A few folks had a habit of just walking up to your desk and helping themselves to your nuts without asking. Stuck their dirty azz fingers in the can etc....fixed that chit, and it was fun to watch.
