In m global travels and growing up I have my share of organ meat but I am just not an organ guy. barf

Between cows, pigs and chickens there’s not much I haven’t eaten, from head to tail and beak to foot. Including heads, tails, beaks and feet.

Yeah, I guess casings are actually organ but not something you just sit down and eat.

Liver (calf, pork, goose, duck and chicken), gizzards, pork skin, sausage casing, deer heart. I've had brain but not a fan. I really enjoy a high quality pâté with a good white wine. I don't really get down with the gastrointestinal stuff other than sausage casing and caul fat. Lots if tasty bits beyond muscle.

Growing up we ate heart, liver, brains of the calves we butchered while the meat was being cut and wrapped. Pork organs went into head sausage stuffed in the pork stomachs. Hearts, livers gizzards from birds, even dove hearts and gizzards. Mom and Dad grew up POOR so nothing got wasted. I remember slipping the scales from chicken feet.

No mas! If times get hard, I can eat them again.

Heck yeh! I LOVE liver, sweet breads (mojellas), small intestines when done right (tripas), tongue when done right (lengua), & heart. Kidneys and gizzards are meh. I don't like brains or stomach. I once saw a beef penis in an Asian market, but I ain't eating that.

As far as a favorite, I'd have to say it's a tie between calf & chicken liver.

Yes Sir, I make it at home pretty regularly but I'm the only one that will eat it. It's delicious when done right.
