I normally use redfish/black drum/sheepshead/ or most species of snapper. Catfish is on the menu tonight.

3 lbs boneless smoked ham hocks (out of tasso), 2 lbs smoked deer sausage, 4 lbs shrimp, 4 lbs catfish, 3 lbs crawfish tails in an 18" Magnalite Pot.

Trinity doing it's thing, good & dark onions..
