Internal temp for pork butt

Going to do a pork butt tomorrow or Sunday. What am I looking for my internal temp to be? Should I wrap it for a couple of hours after reaching desired temp?

I like mine @200°- 205° internal and no more. If you go any higher than that it can get mushy. I take mine off of the smoker and wrap mine in foil at about 170° internal and finish in the oven. That way you can save the rendered juices and incorporate them back into the meat when you pull/chop it. The flavor of the meat will be much better and juicier as well.

Wrap it toward the end. I never check the temperature. I wait until the shoulder blade pulls out easily.

Ive never cooked a pork but by internal tmep either. I like to cook 250-275 and pull it when the bone comes out easily.

are you cooking at 225? Do you finish at the same temp? I try and keep the stick burner at 225 and usually run the oven at about 285. I don't use a meat thermometer until I think it's about done. I run it for about 6-7 hours on the smoker until it's got a good bark before wrapping.

are you cooking at 225? Do you finish at the same temp? I try t keep my smoker between 250 and 275. I put in the oven and leave it at 275 unless I need to get it done faster.

PSA. Save the pan dripping to season the pork after you have pulled it.

Save some of the juices for a sauce for potato salad. It is greasy, but it is damn good. Cook some potatoes chunks, add some cooked onion, and bacon bits, then make a sauce to flavor the potatoes. Use some of the drippings, add some mustard, salt and pepper, mix it all up and pour over the potato chucks.

Thanks to everyone the pulled pork turned out perfect. Started it at 7AM@215 for 5 1/2 hrs to get to 165. Wrapped and went for 4 hrs @300 until internal temp reached 202. Rubbed it Special Chit seasoning, Lawrys, lots of pepper and Famous Daves Rib Rub. And Bill. I did reserve the drippings and incorporated in the meat.

Thanks Bill. It turned out very tender, moist with a really good smoky flavor. I'll have to try a brisket after the pulled pork is gone.
