On vacation and sharing cooking duties. Today it was my sons turn to cook breakfast and he made us “Eggs in a nest”. Sitting on the cabin deck, watching and listening to the river in front, smelling the bacon cooking while drinking a hot cup of coffee. It doesn’t get any better than this.

We make those pretty regularly. I make the hole about half that size. They are great with your favorite hot sauce. When I was a kid--60's--Dad called them egg cups. Many years later I saw a recipe that called them Toads In A Hole.

My mom made the hole smaller and called them "One-Eyed Egyptian's"

Never tried it but I am going to.

The rental cabin is furnished but a bit sparse. My son used a cup to cut the holes in the toast which was larger than the cookie cutter he uses at home. The Grandboys ate the heck out of them.
Funny thing was we watched City Slickers the night before for our movie night selection which we got a kick out of with Curley and his bacon affection.
