I'm starting a 40 gr/day max carb diet this weekend. I also bought a butt roast to cook. Last one didn't turn out. I need to use m thermometer. I have a new pellet grill and have just started using it. I think that would be good even without the tortillas.

Remember low carb diet is net carbs. Meaning total carbs minus fiber since the fiber isn't digested. HEB sells some excellent low carb tortillas. 4 g net carb per tortilla. I lost 70 pounds doing keto and learned a ton of recipes along the way.

Roast them.
Peel skin off.
Chop them up.
Taste how hot they are.
Add according to your preferred heat level, or quantity needed.

I leave the seeds, but you can easily scrape them out if you prefer.
They are good eating.
Usually put up a case a year.
They are roasting them for free in m area.
They are great in recipes, or on a burger or sandwich.
