Looks good. Despite their less than stellar reputation for table fare I’ve made several dishes out of them I really enjoyed.

what'd you season it with?/ preparation Mississippi roast recipe. Packet of au jus powder,packet of ranch dressing powder,sprinkled on a a boned out hindquarter. Placed in crockpot. Cut up a stick of butter and lay on top of roast. Put some pepperoncini peppers on top. A little black pepper and just a bit of chicken broth. Cook on low several hours. Turns out flavorful and tender.

had it a few times when I friend brought some in to work ... couldn't tell the difference than feral pulled pork, was tasty

I've never shot one, but had a friend of my dad's that used to hunt them a lot ... told us that you have to remove the glands immediately to prevent a nasty taste. No experience for me.
side note, this friend had a house in a less than desirable part of San Antonio back in the '60s, lots of crime, but he put in a chain link fence around the yard and had a pet javelina that run loose as a guard animal. He said it worked like a charm! He also had a live rattlesnake that he kept in a large bread box on the kitchen counter in case anyone made it thru the yard and into the house.

We seem to have plenty of them on our place. I have sat some times when i see 20+ every sit for an entire weekend. You can only shoot 2 and you can shoot 2 and the others dont even run lol. I do my best to make use of what we shoot, so we have done a lot with javalina. We have made jerkey, sausage, carne guisada, and smoked whole muscle cuts.
Some eat better than others, seems like i notice a trend... the female of the species seems to have a milder smell and flavor to me. Made a batch of jerkey out of a big male and it was edible but not great and you could definitely taste/smell the javi funk on it. My wife and kids devoured the carne guisada, you would have thought it was made with domestic beef, tender and good. Several years ago i marinated one of the rounds out of the hind leg for a day then wrapped in bacon and smoked for a few hours, it was legitimately one of the best things i have ever cooked on a smoker including brisket pork butts ribs etc. the only problem was the finished product was the size of a grapefruit lol so everyone got a taste an that was it.
