Much better than my first brisket. I would think on a pellet smoker you would be able to cook a brisket without wrapping depending on how much smoke flavor you like. IF you must wrap, use butcher paper. Amazon sells the pink stuff and I've seen it at HEB near the foil. Ricky said what I was going to say about slicing the point. I've seen many well cooked briskets get ruined by being sliced the wrong direction. Try to go against the grain and keep in mind the 2 muscles that make up the brisket have grain that runs perpendicular to each other. Sometimes I will separate the two muscles and slice them individually.

ILOVE, Holy Cow and Holy Gospel rubs ! those guys at Meat Church are great.
I did my first a few weeks ago and last saturday, a point only, came out great. I did a rack of ST. Louis I over cooked a bit 174*
I may bite the bullet and get a Rec Tek with WI-FI, as far as I can tell , They are at the top of pellet grills.

Keep cooking! Thanks! I went to Tom Thumb and no butcher paper and didnt want to go anywhere else. On the point, I went against the grain for the rest of the cuts. It was a little too tender though and kinda shredded . This is for personal consumption luckily so lots of tacos and stuff.

Looks great. Sounds like you overcooked it a hair if it was to tender. But that makes some killer tacos. Tacos and enchiladas are our favorite things to do with some left over brisket.
