I dunno, my plans just changed due to the scamdemic again. Was thinking about doing a big venison carne guisada or a seafood gumbo for the family, might just grab a Whataburger now.

haven't thought that far out yet. maybe fire up the pit for steaks, sausage, fajitas, etc.

I spent a lot of time last weekend cooking various recipes in my Instant Pot for my wife to take with her to Katy this week to have ready made meals for dinner while at our daughter/son in laws since she is keeping those grandkids this week. I am truly amazed at the quick and easy prep the Instant Pot has brought to our kitchen. 2 racks of baby back pork ribs (less than an hour start to finish), creamy chicken marsala pasta (less than 40 minutes total including prep), beef roast with potatoes, carrots & onion (about an hour & 15 minutes including prep and gravy).

Pulled a whole chicken out of the freezer, will pick up a rack of baby backs to add to the smoker.

Brisket here along with pork tenderloin... maybe a chicken. Wife and I will vacuum seal most all of it for later unless we have surprise family show up.

2 racks of baby backs, brisket, 1 whole chicken and a couple pounds of sausage going on smoker saturday morning. Oh and probably some bacon wrapped jalapenos with cream cheese.

I never measure anything, but here is the list of things I put in mine Bill.

Russet potatoes
Chopped onions
Chopped sweet pickles
Mayonaise
Mustard
Salt
Black pepper
Apple Cider Vinegar
Sprinkle Paprika over top when finished

Things I add from time to time
Small cubes of sharp cheddar cheese
Deseeded chopped jalapenos
Fried bacon chopped
I am not a fan of chopped boiled eggs in mine......

ended up stopping by the little meat market in Liberty Hill, Parker's Corner Store ... picked up 2x 1.5" thick ribeyes, 3x 1.5" thick porkchops, a steak pinwheel (have seen, never tried) and pulled some Green's Meat Market (Zabcikville) venison sausage. Fired up the smoker and tossed on some seasoned live oak. put everything in the vertical smoker running about 160° for 20 mi nutes, flipped and another 20 minutes, internal temp was 125° on the steaks, pulled them and tossed directly over the fire to sear for 3 minutes (should have gone 2), flipped for another 3 minutes (should have been 2 also). Steaks came out between medium rare and medium (closer to medium) but were still juicy and pink.

I moved the pork chops, sausage and pinwheel down to the horizontal part that runs a little hotter than the vertical until the chops got to 155° before taking them off.

We had the steaks (actually a portion since they were so big) for dinner Sat. evening, along with baked potato, green beans and a salad. Had the pinwheel last night and was pleasantly surprised. Pork chops tonight or tomorrow.

I filled up my smoker again this weekend. Not shown are 3 racks of ribs I cooked for a friend. We gave 2 foil tins (some of everything) to friends and neighbors, ate a couple meals and sealed/froze the rest. I tried actual KC style burnt end for the first time. Partially separated the point from the flat before the cook, then fully separated after, cubed them up, tossed in some Stubbs Sweet Honey & Spice sauce then put back on the smoker for 30 min. They were really good but I prefer the taste of my salt & pepper rub over the sauce.
