NY strip two different ways

First one was seared in a cast iron skillet and finished in the oven and second one was cooked on my new charcoal grill. Both were fantastic. I’ve found the best way for me to cook steak consistently to the right temp is by using a thermometer. The one I use can be left in the meat while it’s cooking and I can monitor the temp via a display. Maybe it’s cheating, but it prevents me from overcooking.

My choice would be the bottom steak because of the better char look. NY Strip is probably my favorite cut of meat as long as it has plenty of marbling and cooked to the right temp. I wish I would have started using a good meat thermometer years ago instead of just guessing. I have been using one for about 10 year and everything is more consistent.
