I went kinda nuts in the kitchen this evening for a family member's birthday meal. The guest of honor wanted a fish dish. Since some of my family members have compromised immune systems, we have avoided eating in restaurants for the last few months. So I tried to get creative in the kitchen.
I made a toasted pecan and sun dried tomato pesto to be placed on top of a halibut fillet. Seasoned shrimp topped the pesto. Finally a lemon butter basil wine sauce was drizzled on top of everything.
Broccoli, carrots and a wild rice dish finished off the meal.
It was delicious.
