This one was 9.75lbs to start with. Moved from freezer to fridge on Wednesday. Left over from quarantine, pre- meat shortage. 7 hours on the smoker, put in pan on rack and covered with foil for 4 more hours. Temp hit 200° right at the 11 hour mark.
