I'm looking for a good boudin recipe. Thanks to this forum I've become obsessed with making my own deer sausage, deer snack sticks, and deer burger meat the last few years. Since I've got all the equipment I'd like to try my luck making boudin again. I say again because I've tried it before using a general google search and it came out way too salty and wasn't all that great. Anyone have a good recipe they don't mind sharing? This forum has steered me in good directions in the past.
I've got plenty of wild game to add to the recipe so I'm open to whatever....I've got duck, dove, venison, quail, hog, etc.
