The thread by TPAC caught my interest. I went out to the WEB Site "Amazing Ribs" and studied up on their home made bacon process. Ordered the Prague #1 powder from Amazon but unable to find any pork bellies. Had to make a trip to Munster yesterday so stopped at Fischers and they had them.
One pork belly was almost 12 lbs. Cut into 4 pieces approx 3 lbs each. I used a small scale to verify exact weight. This is important as to how much Prague #1 to use.
Bellies are in the fridge for the next 3 days with me flipping them over once a day per instructions.
On day 3 I'll pull from fridge, rinse off meat then to the smoker set at 225 till meat reaches 165.
It should be Bacon!
Cool and slice.

That was the precooked weight per lb. What was the weight of the cooked bacon divided into 49.00? That is the true cost per lb. I think I paid 2.99 per lb. about 6 weeks ago at Costco. I have no more plans to make any til the price goes back down.

I'm with you I'll wait till prices settle down before making a second batch. Unable to get cooked weight since we ate some of it. Super happy with the results.
