Slow cooked any way you want it. I think skinnerback has a good recipe I’ve used somewhere on here. Just simple Cheeks/S&P/onion/garlic/bay leaf in a crockpot.

Braise it, put it in a crock pot, smoke it. Plenty of options.

Braised with wine is good. Making barbacoa with it is better imho but can’t go wrong either way!

I would add a little cilantro to it when its finished and after you have turned the heat off...then cover it again for 15-20 minutes...if you like cilantro thats how they have always done it down here

grin Thanks guys. Like Thisbeer mentioned, barbacoa is simple and awesome. Unless I’m smoking it I like using a crockpot. All you need are beef cheeks, on top of the cheeks just add salt & pepper/quartered up onion/6-8 cloves of garlic/a couple bay leaves. Cook on low for 6-8 hrs depending on the number of cheeks. I don’t add any liquid as the meat and vegetables make plenty. I don’t trim any fat when it goes in (some do). When it’s done and falling apart, remove (or eat) the onion/garlic and discard the bay leaves. Then shred the meat with 2 forks and remove as much fat as you can. I don’t like real greasy barbacoa, so I drain all but about 1/8” of liquid from the crock pot, and mix the meat back in with that. Toast up some corn torts, dice some white onion and cilantro, add a little salsa and get after it!

Smoked barbacoa is also dang good! Just use a foil pan with the same ingredients and cook on indirect heat until you have good color, then cover with foil and finish low & slow unless you want to smoke it the whole time.

Simple and delicious. up

Do skinner's barbacoa recipe in the crock pot and you wont regret it, its GOOD. I like it better than most barbacoa I get at taco houses. Best with onion/cilantro or pico food

I do a knock off of a dish at III Forks. Cook in the crock pot real similar to above, just adding thyme and rosemary. Salt some marrow bones and roast in the oven. Make a simple salad with some aragula and chopped onion tossed in olive oil, salt and lemon juice. Spread the bone marrow on toasted french bread, add a nice portion of beef cheeks, and top with a bit of the greens.
