Don’t feed the troll. If he thinks he knows more than the most award winning brisket Pitmasters out there he’s either an idiot or insanely arrogant. Either way thinking there is only one proper way to cook brisket says enough about his attitude to make it not worth arguing with him. I posted a picture of my brisket. Maybe he can do the same?

Yeah look at the dates nimrod one was in the oven in 2014 and the other was sitting on foil at the lease in an old pit the grill was about gone on...keep struggling to find something roflmao

Strong words for a man that can’t put any evidence up. You want to knock everyone else’s method and spew hate because your the brisket god. But you can’t produce anything to make your point valid.

Maybe the pictures are old. It’s only proven you haven’t been able to cook brisket for years.

So it was the grills fault? Shows you really can’t cook a brisket; I’ve cooked many on Weber plain jane cookers.

Unwrapped, wrapped with aluminum foil, wrapped with pink/brown butcher paper, even finished in an oven ... comes down to a matter of personal preference to me as good/great brisket can be done with any of those ... and likewise, bad or not so good brisket can come from any of those as well. confused2

The right process somewhere, somehow seems to elude me. My latest... I tried doing a relatively small Flat yesterday, maybe 3 # or so at the most. I set my starting temp @ 225 and using an internal probe, wrapped it in pink butcher paper when I hit 160 after 3 hours or so. The meat itself actually came out OK, not dry, pink in the middle, but something just doesn't seem right. Was it because I used paper vs foil?

I've printed TPACK's post and I'm going to try his method for my next one. That looked like some really good brisket.

One thing is don't trust what the digital read out on the mes says. Verify with a good thermometer and also get a good internal probe thermometer and pull it at 190 to 192 degrees and it doesn't get much easier than that.
