You can always grill some red Mexican chicken for something healthy and different. I just cooked some on the pit and even these picky kids tore them up. Nice & crispy with a little char when done. Served with shrimp rice, beans cooked in a traditional clay pot, and grilled pineapple.

When it comes to fish, if it ain't white it ain't right! I will give you all the orange trout and salmon you can hold, but I'm looking for something better, and wrapped in meal or batter and fried. Yum.

Ditto on all of the above up

Wife bakes Salmon with Ranch dressing, Feta cheese and bacon bits, when she serves it she adds cold small diced Tomatoes to it and it is way good.

a little bit of salmon goes a long ways for me, just very rich, oily and fishy tasting unless almost over cooked. Don't get me wrong, I love it, just not very frequent.

our HEB has various types of salmon patties with various things mixed in, like a thick hamburger patty ... my wife likes the ones with fetta & cranberry, I like the one with jalapenos. Just heat up a cast iron skillet over medium to medium high heat, a little cooking spray and arrange the patties where not touching, and cook for 3-6 minutes per side to where there is a bit of a char.
