Who’s got one and whatcha been cooking?

I don't have one, but I want one. I'd try my hand at hibachi.

Steep learning curve for folks using their gas griddles. Most turn it up too high, then turn it down when it starts burning stuff. The secret is to start stuff out low, and slowly increase as the grease releases and forms a nice coating.
The wife doesn't like smelling up the house with lots of bacon, so I will usually fire it up and cook 4-6# of good pecan smoked bacon, then vacuum it in 1# packages. No muss, no fuss in the mornings when you just need a couple pieces in the microwave.

If you go that route get a camp cooking stove and put a griddle on top of it. That way it can act as a fish fryer, stove top and griddle. Makes cooking bacon outside easier.

We have a gas griddle, I used burners out of old water heaters, used a 1/4" piece of sheet steel for the griddle. It would cook breakfast for a crew of 10, eggs and bacon on one side and pancakes on the other. Also used it for frying hamburgers at Little League games for our son's team.

A good friend was an appliance repair guy back in the 50's and 60's. The cast aluminum lids from Maytag washing machines made the best griddles ever. He had 3 of them, and had given one to each daughter. We were very close to all of them, and when the youngest died of MS he gifted it to me. I have been cooking on that for 20 over years, and no amount of money could buy it. Special every time I cook something on it.

Blank I agree heat management is key. I use a laser thermometer to keep an eye on surface temps. Here’s some chicken & shrimp fried rice I made last night - the squash came from my garden.

It was pretty easy minus the volcano onion. I’ll attempt that one next time.

What kind of gas griddle are we talking about here, one like this or?

Good looking setup I would like to have one like that, just not sure if I would use it enough to justify having it??

yep, I would love to have one of these for when family comes to the house as I always do up a pretty big breakfast, would be nice for other meals too but for larger crowds. Plus I am not sure where I would keep one without it being an eye sore on my back patio/porch that is riddled with the grandkids toys, swing, gas grill, flowers/plants ...
