If you like cilantro & pico-de-gallo, you will LOVE this dip.
Super fast & easy to make, and very addictive w/tortilla chips. Our guests can never get enough! food

1 bunch fresh cilantro leaves
1 large onion - peeled/quartered
1 can of plain tomato sauce 28oz
1 can of Rotel, drained

4 ingredients! - That's it!
dump ingredients into blender and run 1 minute or so till cilantro is 'chopped'.
Serve immediately (do NOT refrigerate before serving).

tips:
-do not use a 'sweet' onion - just plain yellow or white;
-do not run blender so long that it starts to turn 'pink'
-layer ingredients into blender just a bit to prevent clogging
-use just the cilantro tops - discard most of stems
-generic Rotel ok.
Flavor is rich & very consistent when made as above.

Just enough comes in the Rotel - use regular ( we only had mild in pantry this week).
You can always throw some extra serrano in if your taste runs on the hot side, but this dip is surprisingly different than any regular salsa.

We do about the same but use jalapeno, garlic and fresh tomatoes instead of caned tomatoes and rotel.

Easy and cheap. I’ll try it, but add fresh cored jalapeños to add that great taste and a Serrano for a little kick. For those that don’t know, a jalapeño without the seeds and white veins are very mild and have a great taste.
