Haven’t made these in a few years, but if you have kids, or just love smoked chicken, give them a try. Plenty of YouTube videos out there for more details.
Cut the tendon around the bone at the base and peel everything back over the knuckle. Push the meat down into a ball. You may have to trim/even up the bottom for them to stand. Season and smoke to about 165. Hit them with a coat of bbq sauce and keep cooking until it sets, maybe 15-20 min. Easy peasy.

I've done the legs before wrapped in bacon with bbq sauce and they've turned out amazing.

What grill did you cook these on Kyle? They look awesome!

That was on my Pitboss Pellet Smoker/grill. I smoke them I smoke them at 250 for a while to get the flavor up then turn it up to 350 to finish them off and let the sauce set and crisp up the bacon.
