When I clean ducks , if it is a 'good ' duck, mallard, teal, wigeon, when I cut the legs off, I leave one knuckle on one leg.
For "other" ducks I cut both knuckles off. -----redhead, scaup merganser, etc. When I have guests over for a duck dinner, they are served the ones with both knuckles cut off.
