Made a roulade with sauteed spinach and mushrooms as well as bacon on the inside. Seared all 4 sides in a cast iron skillet and finished in a 450 degree oven. Excellent use of backstrap.

first time I tried was totally an experiment that my wife thought I was crazy for trying. came out great (I cooked/smoked mine on the pit instead of the oven). I have done several more times using various ingredients, yours looks great!

yep, mine was a lot more well done since the first several did had uncooked breakfast or hot Italian sausage as part of the stuffing ... had to bring the center up to safe temp for the sausage to be cooked. Would work very well with browned breakfast (or Italian) sausage prior to stuffing/wrapping and could keep the venison in the more rare to medium rare range where it is best. Also precooking the bacon wrappings to almost done while still flexible.

Well I know where my last couple pieces of back strap are going. I rolled and cut the backstrap to get it close to a rectangular shape. Cooked all the fillings, laid them in a line then rolled it up.
