What should we do with these? Got half a dozen or so of these mammoths.

A neighbor gave me three plants that now have peppers about that size. Haven't tried them yet.

Definitely need to be stuffed with mix of your choice and the put on the grill to char real well. The charring will take away a bit of the heat, just in case those beauties are as hot as they are good lookin'!

They will definitely turn red in time, but in my experience, they begin to go bad very quickly once they've turned, I recommend that you watch them closely and as soon as they are totally red, snatch 'em off start using them.

I emailed the photo to the neighbor who gave me the plants. Here is his reply.

"They're good to eat green, but they should turn yellow or orange. Mine haven't turned color yet."

Yep, stuff those with whatever and wrap in bacon. When you gut those peppers, try steaming them for about 10 minutes before you stuff and wrap and grill. If you like your peppers hot, freeze them for a few weeks and the heat level will go up.

yep, split them in half, deseed/devane, stuff (my preference is breakfast or mild Italian sausage, cream cheese and sharp cheddar and a little sweet BBQ sauce along with salt/black pepper/ onion/garlic powder), wrap in thick cut bacon, sprinkle with same seasoning blend. put on pit until center mixture hits ~150-160° (to get sausage done), brush with BBQ sauce and sprinkle a little brown sugar, might need to put over direct heat to crisp up the bacon and glaze. Larapin!!!

I got some huge ones from Imperfect Foods last week. I turned them in giant bacon wrapped poppers

Apparently they are also good in étouffée. A neighbor emailed me and asked for a bell beeper for her étouffée. I never told her that I didn't have any bell peppers and gave her one of these instead.. She sent her beautiful children over with a big slice of dewberry pie. Eli said it was the étouffée ever
