First, gotta cook some homemade hot tamales to snack on during the cook. Organic Texas pork of course, with my homemade tamale sauce in the meat (they're frozen). Fired up my Dad’s old homemade bbq pit. First time I’ve cooked on it since the 90’s. It’s at my place now and about to get used a lot more. Sure does cook well. Pretty sentimental day for me. Gotta have my bacon wrapped jalapenos. Then I cooked up some mojellas (sweetbreads). Love them. These were about to get butterflied, reseasoned, and cooked some more. Crisp them up at the end, and then I cut them up and throw them in a skillet with caramelized onions & a little butter. Slap that on a tortilla with some hot pico hmn! Like tripas, I’m the only one in my house that eats them, so more for me!

Fired up my discada and made a batch of spicy beef and shrimp fajitas. I used tenderized skirt steak and marinated them 24 hrs in achiote mixed with chipotle peppers in adobo sauce. Cut the paste with vinegar and water and pureed in the blender with a little fajita seasoning. If you’re not familiar with achiote paste, I recommend that you try it out. Makes excellent pastor too. 4 lbs of beef & 5 lbs of shrimp, didn't last long. Next on the menu, frying up a mess of speckled trout and fresh shrimp. I’m not losing any weight during this quarantine lol. Hope everyone is well. Thanks for looking.
