T'was a good night for the girls. 12 hen eggs; 6 guinea eggs. Meals in the making and still in the shell!!

Never had guinea eggs. Are they just a little smaller? Any richer?

Yes, they are. And their shells are much thicker. Because of their size, when a recipe calls for "1 large egg" I toss in a pair of guinea eggs and it comes out about right.

So for lunch today, I cooked up a patty of venison/hog sausage, put a slice of cheddar cheese on top of the patty, and then one of them thar fresh hen aigs, over easy, on top of the whole mess, and glass of iced coffee to wash the whole thing down. Nice, very nice indeed!

Sounds awesome. I want guineas but I live on 5 acres and Harvey took most of my big trees, so I don’t think they’d stay on my place.

interesting, never tried guinea eggs ... had several ranchers when I was growing up that had a whole herd of guineas, said they were the best watch dog they ever owned
