Half smoked.
Half sous vide/seared.
Roasted butternut squash and left over brussel sprouts.

Would. Never tried butternut squash. I gave my neighbor half of my vegetable garden. He planted some seeds from a store bought squash. They are up, growing, and got a good stand. You just made me get a hankering. cheers

My favorite to impress a crowd is to sous vide a whole backstrap at 128 and sear it on the grill. Then serve with a little chimichurri sauce. You’ll have everyone telling you it’s the best backstrap they ever had. Hasn’t failed me yet.
