Look great! I think I like them better than brisket. I like to cook them cut to individual ribs already, you get a better seasoning coverage and cooks faster.

I’ve never eaten or cooked any, but they look really good! Brisket on a bone describes them perfectly. Aren’t they called plate ribs?

Would that cause them to dry out, or do you wrap fairly soon after putting on smoker?

I don't think I would purchase their brisket as the quality and price point of HEB Prime and Wagyu brisket is enough for me. However, these ribs even though pricey, were certainly worth the experience and quality was on point. Definitely a special occasion type of purchase from them.

to me beef ribs has a slightly different flavor profile than brisket but not a lot along with a different consistency, but seems like a deeper beefy flavor. I've never cut them apart prior to smoking but suspect they would cook much faster. We used to do these all the time when we were butchering our own beef, but don't see to often in the HEB meat section and even then, they don't seem to be very meaty
