Looking for an authentic Chile relleno recipe. One of my favorite meals to eat although I prefer queso on top to the ranchero sauce.

Roast your green chili and remove skin.
Make a small slit at top and stuff with a longer square chunk of Monterey Jack cheese.
Separate 6-8 eggs, be sure to not get any yolk in the whites.
Whip the whites to a stiff peak.
Add yolks 1 at a time and mix.
Have some oil medium/hot in a pan.
Lightly flour the stuffed chili and dip in egg batter.
Place coated chili in oil.
Fry till golden on one side then flip and fry other side till golden.
Take out and place on paper towel lined pan and sprinkle with salt.

Then wrap it in a flour tortilla and enjoy. You can also make them using whole canned Hatch chilies.
