I’ve been saving academy gift cards for a couple years and have wanted this thing for a while, finally went and got it today. Had to rent a trailer, but some plywood (to get it across my backyard) and bribe a friend with meat futures but it’s home and is seasoned now. The vertical box stays about 75-100° less than the horizontal box but I think it will be perfect. I’ve already talked to a friend that owns a meat market in town about getting a brisket, pork butt and turkey breasts for its initial cook.

I want a vertical box for sausage. I have a hard time getting anything cool enough to really smoke sausage. Great buy!

That vertical box will work great for cold smoking in the fall and winter. I do lots of cheese in mine, not an OC though.

I heated it up and let it run at around 225-275 for a while, then got it real hot, up to 475 in the horizontal chamber and when it cooled back down to 250ish sprayed all of the grills with cooking oil. Now everything inside is coated in a cooking oil. Today it smells like it has been cooked in, no longer smells like raw metal.

Here’s a picture of the inside of the vertical box, took a measurement for a friend but you can see how the grills look oily & slick and like they’ve been cooked on. They are seasoned.

Simple answer, oil and heat.I do it different than Scott.I wash the inside first. Then spray the whole inside with oil, then build a fire. A big fire. Build it to 450-500 degrees and roll the fire for about an hour. let it cool down to smoking temps and let it go until the coals go out.

Do you spray with oil after the big fire? I noticed that some of what I sprayed before the high heat burned off so I reapplies after the big fire cooled down.

You could if you want to but its fine to cook on after that process.

First cook on the new smoker under my belt. A bit of a learning curve, took longer than usual. Learned that I need to run it hot and not worry about horizontal gauge, only the vertical box gauge. Overall, everything turned out great!

Never put any oil in my smoker to "season" it....just cook with it. Once you cook a couple briskets/pork butts, you'll have so much grease/fat in that thing you'll be looking for a way to get it out. I actually had so much oil in the belly of my big trailer rig, I had to get a bag of oil absorbing pellets from home depot to get it all out of there. one of these days I'll weld in the drain pipe/valve I built 5 years ago hammer

This one has a drain that filled 2 jars during the cook. Probably 30 oz total.

I drilled a drain hole in mine when I got it. Hung a 1 gallon pail to catch the grease.
