Using up leftover brisket. Some BBQ pizza always is a big hit. Working from home has giving me some free time, so I’ve been cooking more lately. That’s giving me the time to make a lot of stuff from scratch. Lava cake from scratch with a homemade ganache and homemade whipped cream. Turned out amazing.

I gained 10 lbs just looking at the pictures....

Thanks! Ya, that picture came together better than I expected.

I used a dark BBQ sauce for the sauce. Then I sprinkle a little cumin, garlic, red pepper flakes, and oregano over the sauce. I've used pizza sauce in the past, but it just doesn't come out like a BBQ pizza when you do it that way.

That's one thing I can't come around on pizza, adding bbq sauce. I don't like how the bbq sauce pairs with other ingredients.

That was my first attempt at a lava cake. I was told they were pretty easy and that's why you find them in so many restaurants. I have to say, it was pretty simple.
The ganache is just melted chocolate and heavy cream mixed and frozen in a bowl.
Then melt some butter and chocolate together
beat eggs and brown sugar together
Mix egg mixture with chocolate mixture, then add flour
fill bottom of ramekin. Ice cream scoop ganache in the middle, fill the rest of the ramekin
bake for 11 minutes.

That's it. You can pre-make each mixture before you even start cooking and dump it in the ramekins when everyone is finishing their meal. 11 minutes later you can impress some guests with a gourmet looking meal. That tastes pretty good. And homemade whipped cream sets everything off. 1 Cup of cream, 4 tablespoons powdered sugar, and a teaspoon of vanilla. Beats the hell our of cool whip. [list]

Once I saw Alton Brown make them, then I realized man they are easy, still haven't made one though.
