I had some left over puff pastry in the deep freeze so I decided to put it to use. I made a Beef Wellington.

Yes the Beef Wellington that Chef Ramsey has made famous as he cusses out his novice chefs on his cooking show. You know the line "$$@3$$ $$@44 its raw 7))55 44$((6 etc."

Now I must admit I was lazy and I did not want to fight the lines in the grocery store for Parma ham and mushrooms that the classic Beef Wellington contains, but I decided to just leave those ingredients out. Remember the cook determines the what is cooked and how it is cooked.

My wife greatly enjoyed the meal of Beef Wellington, baked potato and green salad. I earned a "kiss on the cheek" for my efforts.

If you have never tried making a Beef Wellington, it is not hard to do.

1. Get a good steak.
2. Put the steak on the cabinet to come to room temperature.
3. Season the steak then sear the steak in a hot skillet.
4. Coat steak with mustard.
5. Coat the meat with cooked mushrooms.
6. Wrap everything with Parma ham or prosciutto.
7. Wrap everything with thawed puff pastry. Puff pastry is in the grocery store.
8. Brush the outside of pastry with beaten egg yolk.
9. Bake at 400 degrees F about 20-25 minutes.

that looks good. I tried Ramsey's Beef Wellington at his new Hell's Kitchen in Lake Tahoe last month. Didn't think it lived up to the hype and $48 price.

Where in the cooking process do you add the red wine? I understand when to use the other items, but the red wine threw me a curve.

Most goes into my mouth but during the mushrooms. At least the recipe I use but is actually Sherry. Very small amount.
