Tried something different for Super Tuesday. I started out making chicken taquitos but the wife wanted enchiladas so I made adjustments and here is the results. I added a little chili powder to the green chili sauce and it turned a little red but it was green to start with. There is also green chili`s mixed in with the chicken filling. Wow that looks good! Can’t wait to see the final results. They turned out pretty good for something different. I actually prefer cheese enchiladas with chili, but this was still pretty good. The chicken filling included 2 shredded chicken breast, 1 small can green chilis drained, 1/4 of a small onion chopped, chili powder, cumin, sharp cheddar cheese grated, 1 pkg.
