I stuffed 6 big pablono's with bacon wrapped fillet strips, cheddar and jack cheese, fajita seasoning and a can of enchilada sauce. I topped it with jack cheese the last 10 minutes in the oven.

I have to try that. How long did you cook and what temp? Did you pre-cook or partially cook the fillet or bacon? Was the bacon done....

That looks perfect!


I pan fried the fillets, sliced them up and pan fried the slices until about medium rare and the bacon was done. I toasted the peppers under the broiler and popped them in a Tupperware with the lid on to steam them in their own juices. I got most of the pepper skin off, got the seeds out and went to stuffing them. I baked it at 300 in a fancy non-stick cast iron skillet, that my girlfriend got me for Christmas, for about 35 minutes and added the jack on top near the end.
