I have participated in the classic crawfish boil for a large number of people a time or two and various versions of that pretty much seems to be all that can be found online. On a hunch I dropped a trap in a live stream that runs near my camper in East Texas and caught several very large crawfish in the one night. Bigger than the seasonal live crawfish you can get at the grocery store. At the time I was exploring more as a future source of fishing bait and turned them loose. Now I am thinking I could take a couple more traps next time and start bringing some home to cook. Y'all have any preparation and recipe ideas cooking only for two rather than the usual big group crawfish boil?

Eatophea. Hopefully it’s spelled right.
They will also make great trotline bait. They stay on the hook a long time when hooked properly.

Brings back old memories, They were everywhere when I was growing up. They made little mounds.

I was thinking I could just boil them in a crab boil then peel the tails and freeze the tail meat for later use in Jambalaya or a pasta. I always enjoy eating the Jambalaya Spaghetti at California Pizza Kitchen.

Just a smaller pot...crab boil or any ready mixed crawfish spices...HEB usually has a good selection....

While they are alive give them a soaking in salt water to clean them out Old cajun wives tale. Freshwater flush or saltwater flush yields same results. I would get a smaller pot and do traditional crawfish boil. We're doing a boil at the end of the month. I can't wait!
