Our kids gave us an air fryer for Christmas, and we've really had fun experimenting with the different foods: fish, all kinds of chicken pieces, lots of different veggies. Last night I decided to see what the air fryer could do with a whole chicken carcass. Bought a 3.5 pounder. Made a rub: 2 TBL olive oil, 1/2 teaspoon dried thyme, 1/2 teaspoon dried basil, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1 teaspoon black pepper, 1 TBL kosher salt, 1/2 teaspoon oregano, 1 teaspoon red pepper flakes, 1/2 teaspoon onion powder. (at this point, my long-suffering wife observed that I had used just about every spice in the cabinet, shook her head and walked away) Mixed all this together in a small bowl, and let it sit for a few minutes while the fryer got up to 360 degrees. Sprayed the basket with cooking spray, rubbed the mix all over the chicken, put it breast-side-down and let the fryer do its magic for 45 minutes. I then flipped the chick and let it cook another 10 minutes. It turned out great! Even the white meat was juicy and tender. The skin wasn't very crisp, but it was tasty. The above-mentioned wife claimed that it was the best chicken she'd ever had!!

Sounds great. Sides? Mashed 'taters and green beans were our sides. Washed it all down with a bottle of pinot grigio; and we tend to consider wine as a "side" with most of our meals, except breakfast. As the sign in our wine room says:" A Meal Without Wine is Called Breakfast" :-)

Be sure to oil the skin. I cook at 400 to get it crisp.

Be sure to oil the skin. I cook at 400 to get it crisp. bigbob, there's oil in the rub that I put on the chicken; do you suggest oiling it up before adding the rub? I think I'll try your suggestion of cranking up the heat to 400 to crisp up the skin. Thanks.

Post more air fryer recipes, this turns out pretty good: I'm trying this one tonight, leswad: I was so pleased with the experiment I did with a whole chicken in the fryer that I have decided to try a tenderloin. I'm going to use the same ingredients that I do when I put the loins on the grill: 1/4 teaspoon cayenne powder 1/4 teaspoon garlic powder 1 tablespoon smoked paprika 1 1/2 teaspoons salt 1/2 teaspoon black pepper 1 teaspoon garlic powder 1 teaspoon ground mustard 2 tablespoons brown sugar Couple of tablespoons olive oil I'll rub the spices into the loin and let it sit over night. I'm thinking that 20 minutes at 400 degrees ought to give me a loin with an internal temperature of 150-160.
