Tater Cakes!

I made mashed taters yesterday. Used half of the batch today for tater cakes. Added a small chopped red onion, chopped four small sweet chili’s, two each red and yellow, chopped three green onions. Seasoned it with garlic and onion powder, salt and pepper. Mom just added onion and eggs, I’m using more goodies in mine.

Stir, stir, stir. Add some flour now to help them firm up and they’re skillet ready.

Warm up the cast iron, get the bacon grease -

Medium high heat, doesn’t take long.

I like a little ketchup on mine. Tabasco is good too.

Cast I thought about making what I hoped would be easy hash browns by microwaving a big old tater then scrapping the insides out and season with chives, garlic powder, salt pepper, red pepper and ?
Then pack them into a patty and cook in the pan.

I use store bough hash brown patties for that. Having one tonight.

Heck, I’d just stuff it back in the skin and bake it again. If you wanna fry it, egg and flour might hold it together for you.

Cast I love those. Grew up eating them the day after we had mashed potatoes. Mom just used egg and flour in hers too. I like the adds and my try it myself. And heck yes to the Ketchup
